Recipe for Bubble and Squeak with Smoked Bacon: A British Favorite Budget Family Meal Bubble and squeak is based on mashed potatoes, carrots, sprouts or cabbage, peas and/or sweet corn, onion, and indeed, any leftover cooked vegetables available. INGREDIENTS FOR 4 SERVINGS OF BUBBLE AND SQUEAK: 4 large potatoes, mashed with milk and butter and seasoned well A tablespoon of cooked peas or sweet corn 2 tablespoons of cooked green cabbage or Brussels sprouts, chopped up 2 tablespoons of cooked, sliced carrots 1 small friend onion Oil for frying 8 slices of lean smoked bacon Crusty whole meal or granary bread and butter METHOD: Mix all the vegetables into the mashed potatoes; adding extra freshly ground black pepper, if required. Heat enough virgin olive oil to completely cover the base of a large frying pan. Turn on the oven to a medium heat. Divide the vegetable mix into 4 large, or 8 small patties. When the oil is really hot, place the patties carefully into the pan. Lower the heat and cook for about 5-7 minutes. Meanwhile, start grilling the bacon, to personal taste, though crispy is good. Turn the patties over, once the first side has become crispy and brown. Cook for a further 5-7 minutes. Do not worry if they break up a little, just scrape the crispy surface up and add to the patty. Use a fish slice to transfer them to a large dish or oven tray, lined with kitchen paper. Pop them in the oven till the bacon is ready. Serve at once, piping hot, with the crusty bread and butter. A fast, delicious and cheap recipe! VARIATIONS AND ADDITIONS: Broccoli can be used instead of cabbage or sprouts in the bubble and squeak, and turnip can be mashed into the potatoes.
